Dreamland BBQ

This Dreamland BBQ is in Roswell.  The original of the chain started in or near Mobile. Alabama.  The manager of this one was one of the invited guests speakers to a BBQ talk at the Marietta History Museum in 2011`.  He said he worked at the original Dreamland and the owner would watch TV all day.  And in a timing system, known only to him, he would turn around and the cooks it is time to turn the meat to the other side.  They came out perfect every time.  I wonder if the manager knows his secret?
